So I hope I'm not the only one who notices this and I hope I can convey this clearly. Why do some tires look more square while some look more rounder. I mean the corners. Here are two examples below:

In one, the corner that joins the part that touches the ground to the rim face has a sharper corner. What determines that, and is that a spec you can measure or specify?

i think that's measured with tread width, and is just part of the design of the tire. Square, stiffer sidewalls for better turn in? not sure, honestly.

Also stretching a tire on a wide wheel will sometimes cause the round look.

Angle but yes some tires do look different.
Softer sidewalls will give you the rounder look.

It depends on the manufacturers filler piece as part of the tread design, contact patch and tread compound. Sticky tires tread wear of 120 or less will have a square shoulder versus say a 300 tread wear. Performance as opposed to cruiser.

Its based on the manufacturer and their design/engineering etc for that wheel. We actually take this into account when offering our custom fitments for our Vossen Forged Wheels.

So your observation is pretty good.
