So did you baste the brisket with the jack or yourself? just curious how to approach this recipe LOL

The Single Barrel is for the cook. Although, I do use regular JD in the suace I make and I have used a combo of Jack and coke with ribs.

that is the only benefit to pellet smokers, my friends have them, they load a hopper, and it keeps the same temperature automatically all night. myself with my gas I have to pediocailly watch it, using a wifi temp device and hope doesn't deviate too much.

charcoal, not a clue how to maintain temps. ive tried to cook once on a charcoal grille and failed miserably. meat was raw, but I swore the embers was piping hot.

I add wood chunks about every hour or so. This smoker / grill is awesome. Fill the hopper with lump or briquettes(?) light the fire, set the temp, and a lillte fan runs to keep it at temp. The only thing I really need to watch on long cooks is bow much charcoal it's using. Summertime, a 16 pound bag will last all night. I have checked it at 10 pm, got up at 5 am, and it was running strong. It has a bluetooth and wifi app, but it's in a bad spot and doesn't get good wifi.
