Is the resonator really restrictive?
Would there be any benefit of installing an x-pipe instead of it?

The resonator is not restrictive on the V6 as it is on the GT. The GT resonator uses decreased pipe diameter while ours does not. The xpipe will still have a benefit due to promoting exhaust scavenging that the resonator does not do.

So the resonator on the GT exhaust starts at 2.25", then decreases to what(?), and exits at 2.5".

I believe the GT resonator is the same as ours and is 2.25" all the way through and then opens up to 2.5". That is why it is so restrictive for the V8 as even 2.5" is pushing it.

OK, so its no more restrictive than the stock V6 resonator. The way I read your reply was that the V6 was not restrictive but the GT is in some way to the V6. I now understand that to the V6, the GT resonator is no more or no less restrictive.

I know when i got rid of the resonator with a chamber style x pipe...i picked up some mid range power for sure

Performance wise the resonator isn't hurting anything. It will definitely increase the sound of your 6 by adding an X or H pipe. The resonator makes these cars sound like civics. There isn't a lot of exhaust noise. Before I added my exhaust my GT was way more game than my 13 V6 with axlebacks.
