Bucatini “carbonara”, frenched chicken thighs, and some grilled bread. Washed down with a chilled Columbia Valley Sauv Blanc. I added mushrooms and garlic, so the carbonara wasn’t traditional but I’m gonna try not to break my arm patting myself on the back. It turned out really well

Roast beef sando with onion jam and a horseradish chive sauce. The onions had a deep and rich sweetness that was balanced well by the horseradish sauce. Yes I cheated and just bought roast beef. I really liked it and recommend

This is an idea that I’ve been rolling around in my head for a while. I’ve never had a wellington, so I honestly can’t say how this compares. However I can say that I don’t know how dough, mushroom, and beef could taste any better than this. So it’s safe to say that I was happy with how it turned out.

I made some home made jambalaya for the first time today. I'll be making this again. I might cut the liquids and cook the rice separately next time since I have a rice cooker. But man this was GOOD!

I diced up: red and green bell pepper, 1 each jalapeño, red (chile?) pepper, and some kind of green pepper...Anaheim I think? One onion and a bunch of garlic. Sautéed with some oil until cooked through but still firm.

I added a 14oz can of crushed tomatoes, 4 cups of chicken broth, some chicken bouillon, bay leaf, 2 tablespoons combined of Old Bay, Slap Ya Mamma hot version, and some other Cajun spice. I also threw in a little cayenne and some thyme. 2 cups of uncooked rice and I had to keep stirring and add some water as it cooked.

Separate pan I seared and cooked a pound of sausage and about 2 pounds of chicken.

When the rice was done, I added the sausage and chicken. Mixed it through and then added 1.5 pounds of uncooked raw shrimp.

This was so good. And really ain't that hard. Just gotta keep stirring while watching the rice. You can omit the cayenne pepper and use the regular Slap Ya Mamma if the spice is too hot but I really liked it this way.

I had to google this and am now loosely sure I know what it is. You make the gastrique yourself? I’m curious to know some more about this dish
Yes. It's easy. I had some scuppernongs that were going to go bad so I used them, but it can be any fruit I guess. The sauce turned out with an unappealing color but it tasted good.

A crab cake mess with a spicy aioli. Shrimp linguine in a lemon white wine butter sauce. Summer squash. A slice of sourdough.

Looks great. Maybe try it with a mere trace of Vegemite next time to add a unique touch. Goes really well in mince and casseroles too. Just FYI ...:)

Alright alright!!

I haven't been able to find it at any local stores. So I just ordered a jar of it and one of Marmite...finally.

I'll report back in a few days when they arrive. :like:

Just go easy on it, a little is all that’s needed (based on plain toast / muffin / crumpet etc) i.e. don’t use it like a jam (jelly) :like:

Oh yeah, if you have cats don’t leave the top off the jar unattended either - ours cats have a strange attraction of trying to lick the jar … WTF ? If they can’t find the jar, I will often return to the kitchen to find them on the worktop or in the sink cleaning off the spreading knife … ?

Good advice. Vegemite in particular is very strong so a spread so thin it's barely there is all you need. IMHO it goes best with a spread of butter or marg.

Might be the salt
