I am not a mechanic so this maybe a stupid question but I thought I'd ask anyway.

Is there a way to allow for a wider/lower offset wheel up front with an aftermarket spindle/hub assembly that is "shallower"? Or is the only way to go with a lower offset wheel is to widen the fenders?

Depends how wide you really need to go... but right now there aren't any spindle swap options regularly available. You could always go that route if you want to have a custom suspension/chassis shop build them out for you... seems like quite a high $$ venture if you aren't racing professionally with the resources to back the purchase/work.
10-10.5 wheels have been fit to the front of stock fender-ed S550 so far... do you really need more than a 295-305 wide tire there? Pulling the fenders a few more mm will let you put a lot of wheel up front... and frankly flares/widebody fenders would give you plenty more for probably less $$ than custom made spindles.
