The limit before the car goes into limp mode is 300 degrees Fahrenheit. If you track your car it's normal to see 250-260 degrees. As long as you do frequent oil changes when the oil gets that hot you're fine. I haven't tracked the 350 much but on my Boss 302 I changed it every 4 track days or about 6-8 hours of track time. I'll do the same thing on the GT350. In the Boss oil temps got upwards of 270 because the oil to water cooler that was no wear near as efficient as the cooler on the 350. My buddy with a Z06 sees 290 degrees every time he tracks the car with no issues. Just change your oil more frequently like I said and you're fine.
Engine oil temp can cause limp mode???

In cold weather in normal driving on a 30 min (highway speeds) commute to work oil never reached 190 and hoovered at 170. LOL the VooDoo really doesnt like the cold.
On the contrary, if pushed hard-ish, it needs the cold otherwise he gets sick.:D

It's tough when it's cold out to get the temps above 170! I was out the other day and it was 65...and it took me 5th gear for 10 miles and a couple 4-5k pulls to get near 190. 75 to 80 degrees is the magic number with this cars set up.
Speaking of which, how do you rev limit according to oil temp?

From cold to 190ish-200 full bonkers mode?

Yes, it does rev limit, however we all here agree, don't put your foot in it until your at around 190. I try to keep it at lower than 4000 before then.
