? Should I upgrade to the 18+ or the GT350 intake manifold with the JLT CAI for my 2015 GT? Right now there is a KN CAI and stock manifold.

No imo, stock 15-17 intake flows nicely with a decent panel filter, keeps the inlet temps in check, would be an improvement over your cai imo, doesn’t look so nice though!
All comes down to level of tune and use age though
18+ or Gt350 intakes will need a tune

18+ has quite a few other differences and options.

It's not like a 2015 GT + simple intake mods = a 2018+ GT.
