What exactly do they exactly do? A mustang owner I met in person was saying track mode also changed the way your exhaust sounds. So I tried that and I didn’t hear anything different?

Sport/Track mode changes throttle response and steering. If you have Magneride, it firms up suspension. If you have Active Exhaust, it increases the sound of the exhaust.

Only on active exhaust cars. The confusion, I think, comes from a phrase in the 15+ owner's manual that mentions a "more aggressive tone" or something like that when Track Mode is selected. The consensus, however, is that what the apparently non-native English speaking author meant by "tone" is "behavior". On non-active exhaust cars, there is no "tone" difference between Sport and Track.
