Is Cardinal available? It is shown on the picture of the swatches in your first post, but I don't see it available in the selection tool on their website from the link you provided.

The Cardinal stitching is a good match for ruby red. It's what I ordered. Ink Tuscany wrap, Red/black Barracuda insert and wings, with Cardinal stitching.

Fronts are leather. Rear is vinyl.

Can the rears be done in leather? If this is extra I'm happy to pay the difference.

I asked a Katzkin dealer about installation on the door panels yesterday. I also asked about the premium leather option. The seating surface is what gets upgraded, everything else remains vinyl. Hope that answers your question.
