Trying to change the interior ambient light color. I can change it for that drive, but after leaving the car and coming back, starting the car again, it's back to the original color.

Is there a trick I'm missing?

You have to store the new color by using one of the memory buttons on the driver's door panel. Push and hold one of the buttons and you'll get a message on the cluster that you have saved your settings.

I don't have to do that on my '16 GT. Whatever color I choose, it stays that color without using the memory buttons.
