I have a question; why is the torque and HP so disproportionate to each other in these cars? I remember in the old days (2V, 4V) torque was always a little higher than hp. Now there seems to be significant deltas.

that's about normal for a centri blower, a centri blower builds boost linear, so boost climbs,

it's not hammering your engine like a pd out of the gate

torque doesn't win races, hp wins races

my 11 car doesn't even makes around 700 ft/lbs and goes 8.1's.....

In addition to BeefCakes response (which I agree completely with) you could also point out that these are simply more "efficient" engines in terms of work over time compared to the older 2v/4v cars.
