In terms of downshifting in normal day-to-day driving, is rev matching the technique that I should be using?
Yes, it makes it smoother and puts less wear on the clutch. It's very easy on the Mustang as it goes to the right RPM automatically for you when you press the clutch in and blip the throttle.

She's back :) :) :)

The dealership sent me the pics of the clutch so I'll post them later after class. Here's a quick pic I just took :)

Beautiful car. Definitely practice up and downshifting, at slow speeds and in no/low traffic areas man. It will take many thousands of miles to be adept at stick shift; it doesn't happen overnight. Good luck and congrats on getting the repair done so quickly.

It does ... automatically? Not from what I can tell when rev-matching.

Finally took a break from driving to post these clutch pics!

Here is what happens to your clutch when you accidentally shift into 2nd gear at 70mph...

The pics make it look like just the clutch disc exploded. The flywheel and pressure plate don't look bad. Looks like the clutch disk (with the friction material) skinned off all the friction material on the pressure plate side.

What parts did they actually replace? I'm thinking just the clutch disc and maybe also the pressure plate. I'm thinking the flywheel was fine.
