High mpg?

My stock 2015 EB /auto convertible typically gets about 31-33 mpg on open roads going at a steady 55-60 mph.
Every so often, my mpg rating jumps to 40+! At first, I thought I might be going down a very long descent with a stiff tail wind. But I have gotten this higher efficiency quite a few times. What is odd..is that if I have to slow down to 50 mph or so (traffic etc.) and then accelerate back up to cruising speed...mpg stays at 31-33 and does not go back up to the higher rate.
I have used a portable gps unit and carefully measured fuel rates...this jump is for real.
I love getting such great mpgs...but I am worried that maybe the engine is running too lean or something...then correcting fuel rate when I slow down.

Anyone else getting anomalously high mpgs at times, that can't be explained?

At 55-60 I have no problems getting 30+ mpg in my 16 ecoboost auto vert, that is the sweet spot for highway MPG. The problem is most of my commute is on 65+ mph roads with people realistically going 70+ and the economy drops several mpg at those speeds.
