Help with Steeda caster/camber plates

About to install some Steeda caster/camber plates.

I’m a noob and never installed c/c plates before so forgive my ignorance, but what are these extra plates for (circled in red).

All of the installs I’ve seen only use one of these plates placed between the top of the plate and retaining bolts.

Do I need to use these extra plates and if so, do I just place them between the top of the plate and retaining nuts or do I put one on the underside of the plate (see pic with red arrow)?

In case anyone else comes across this thread, found out that the other plates are spacers if you want to raise your car, so not needed for a typical install.

Are these easy to adjust once mounted?

Yes, they're easy enough to shift once mounted - but knowing how your toe has shifted after you've changed camber probably means a trip to the alignment rack, so its not like you're likely to be electing to change settings on a whim.
