i for one will not pay top dollar for a non numbers matching car(1/2 value of matchng # car).
IT IS A BIG DEAL in the resale market
Do you actually verify all the VINs when you buy a used car? I've never thought to even check. I don't personally expect our cars (even the R) to be really collector worthy. Even the 2000 Cobra R with its even more limited production isn't worth much more than it was back in 2000. Will it "hold" its value more, yes. Collector car, doubt it. Keep in mind I'm biased as I'm not a car collector (I have a heck of a baseball collection though). I buy my cars to drive and to drive them good.

Just for reference, here is the area on the engine where you would have some part of your VIN etched (driver's side). This is my replacement engine, hence no etching. I blurred out the sticker on the underside, it's a number and barcode that I believe is the serial number of this particular engine/block.
