I had several leaks of coolant during track days and I can't get this stuff off. It is on plastic, metal and rubber parts.

I assume an engine degreaser would do the trick, but looking for tips.

What have you already used in attempting to remove it?

I'd probably start with all-purpose cleaner (APC) such as Koch Chemie Green Star.

Agreed, a good APC diluted around 5:1 would be my starting point. I have been known to use P&S Brake Buster on engine compartment too.. It is a nice high PH foaming cleaner that can be agitated really well. Might not touch it but would be a good place to start. Another favorite of mine is the new Clean by Armour Detail Supply, citrus based and cleans really well.
