Let's for a second just pretend I know near to nothing about customisation...

By plugs do you mean spark plugs?
What will a catch can do?
I read that an intercooler is only really necessary when you start getting into stage 2 maps when you're working the car that much more?

Looked at a downpipe but am afraid it might actually be too loud, the roush axle back creates a surprising amount of noise!

Catch can basically catches the vast majority of shite that the engine tries to reburn, which innevitably cakes the pistons, walls, etc etc and gimps power in the long run, on a forced induction car the blowby is pretty savage so a bit more recommended and just adds to engine security.

Intercooler you read wrong. The intercooler is savagely important, the OEM IC is absolutley fucking shite, it heat soaks like crazy (which in short, means you make a lot less power), i'd recommend the Levels, ETS (i use this), speedfactory as good options, it keeps the engine cool, which means you can make more boost, helps with keeping charge temps down, cooler temps = more power etc etc.

Downpipe it's all relative, my one didn't add too much noise, but you do need a tune to run a downpipe due to the O2 sensors moving.

For the air intake I've been eyeing up the roush intake system for a quite a while, is this just a shitty air intake with a known brand on or is it any good? As I noticed it wasn't one you recommended.

Cold air intakes are rubbish on the mustang, this has been proven numerous times on Dynos. I'd suggest only going for a CAI if you want the looks in the engine bay and dont mind sacrificing power. If you want power: Airaid modular intake tube (c £150), K&N or AFE filter (C£50), velossatec big mount (C£140).

As for catch cans, i run a mishimoto but i'm intending to at some point when i can be arsed, to swap to a UPR DVCC (Top end), both are sufficient for full bolt on tune levels.

As above, plugs, intake, intercooler, catch can before a tune. Then downpipe, wastegate, bov, chargepipes with the tune (that'll have you protuned (tune+ or PD tuning) around 360-400engine bhp and 400lbft.
