So I was driving last night and was looking at the middle screen which shows temps of all kinds.
These are great to monitor your car and I use my oil temp and trans temp every time I turn my car on and start driving to see when they are up to temp and I can start pushing it.
My question is what temps are normal for the cylinder head temp and what should it not exceed over? Stock vs Tuned?
Also looking at the inlet air temp. Does this show the temp of air coming through the air box or is it the temp of the air after the intercooler?

Cylinder head temp is not terribly accurate as it's working off of coolant temp and then calculated, the source of the data, resolution and refresh rate give you a general idea however of approximately where it's at just to be clear.

Typical cylinder head temps on the readout typically vary between 180 to 215 on average. If your tuned AND running a 160F thermostat, the range drops by about 18 degrees on average. If your just tuned, the temp range should stay roughly within the bounds of stock unless your radiator has exceeded it's thermal capacity.

Air Inlet temp is the Air Inlet temp, it is as you surmised the air temperature at the intake, not after the inter cooler.

Oil temperature readout is an inference, not a measurement on this car. There is no temp sensor. Cylinder head temp, IAT, and other things are combined to give you an estimation. The estimated 142 degrees is when the PCM kicks the oil temp from 'low' to 'normal' so take that into account it you want. It is a good barometer though. Never flog the car when the oil temp is low.

Oil temp is fairly accurate. The temp going into the green corresponds well with the expected pressure drop (I can tell because I've got a Performance Pack car...)

I agree, its impressive they nailed it down so close despite not reading the actual temp.
