Can any one tell me how to change the readout in the centre of the tacho from RPM to gear position in a manual. I see it in the pics for the Bullitt but there seems to me no way to shift

That's an automatic transmission feature, so not actually available on the Bullitt. I know Ford has a picture of it right on the website for the Bullitt showing the digital instrument cluster, but a clue is that it's in gear 7, not to mention the PRNDS indicator.
It's just a stock photo.

For the digital cluster on a 19 manual:

Settings (gear button)
->Advanced Settings
-> Display Setup
-> Tachometer Display
o Gear
o RPM
o None

Thanks but could you be a little more specific , when I scroll through I don't see these . Forgive me I am 65 and a lot of the technology in this car will take me months to work out. I just love that sound and driving it, Thanks ,

Yeah rev matching/gear display on the manual wasn't a thing till MY19 on the 5L.

This sequence is if you have the fully digital gauge cluster.
That sequence I typed is after hitting the little gear button on the steering wheel and going into those sub menu's.

1) Hit the GEAR/SETTINGS button on the steering wheel (right side)
2) Press the down button till ADVANCED SETTINGS is highlighted (click OK)
3) Press the down button till DISPLAY SETUP is highlighted (click OK)
4) Press the down button till TACHOMETER DISPLAY is highlighted (click OK)
5) Of the 3 options, highlight GEAR and click OK

Other than a video, not sure how much better I can explain it :)

This feature is not available in the dash in my mustang , just as when configuring gauges we do not get differential temperature. I was searching for something that does not exist i my car. Thank you all anyway.

Thank you Nexus, I finally found the area in settings and was able change RPM to gear indication so I really appreciate it. At 65 some of the features on this car I may never get to due to
(a) not realising they exist
(b) not fiddling with the system
(c) being illiterate about what they are for especially sync3 as most of it goes over my head at my age. I bought it to enjoy having blast on the weekends, I remember having that same feeling in my dads manual XA GT hardtop in the early 70s as a nineteen year old....geez this car evokes some fantastic memories , wish my dad was here to share.
Anyway tanks again

Well Nexus finally got to take the car out and all I have where the digital tacho readout was is a black void. There are no options as you say, just tacho X, or no tacho, so it must be a different setup we have in the antipodes but thanks anyway.
