So I was looking at a corsa extreme cat back system for my s550 16’ and they are quite pricey and I found another way of getting an exhaust which is buying an axle back separately which seems to be cheaper, but my question is if I go with the second option of buying an axle back and mid pipes separately would it affect the sound and sound worse than if I were to buy the corsa extreme cat back.

The difference between a full catback and a resonator delete + axleback combo is a few feet of pipe around the differential. 99.99% of the sound tone coming from the exhaust is going to be due to the muffler(s), crossover (or lack there of) and pipe size. The couple of feet between the h pipe and axleback is going to make 0 difference in sound.

In certain cars like the 6th gen Camaro, part of the pipe near the rear end is crimped severely, so one could make an argument that replacing that pipe (in a full catback) would be beneficial for sound and power over keeping it and just adding an hpipe and axleback. But the Mustang exhaust piping is very nicely routed without any major crimps or bottlenecks.

catback will take you up to 3" from 2.5 inch , if you get a 3" catback

That's true, I forgot that all Corsas are 3.0"

My statement still holds relatively true, there will be very little if any difference going with a full 3" exhaust vs 2.5" h pipe and 3.0" mufflers.

Something I've noticed between a buddies and another is that it seems that a full 2.5 inch seems to get raspier a little faster than a full 3 inch exhaust. For example, a buddy of mine has the Borla S type axle back (active) and SR performance X pipe. Compared to another car that has the Borla S type catback (active as well) seems to get raspier down low. I'm sure the sound is almost negligible at times. But at low RPM's you can definitely hear a difference when outside the car. Of course this is just my opinion.
