Being that the BFGs are a directional tire, rotating them on a staggered set up seems like it would be a PIA. This would require taking them off of the wheel on one side and then mounting the tire on the wheel on the other side, correct? Anyone running these on a staggered set up? What do you do to maintain even wear on these tires?

since when?

Right, so buy 255/40 and a 5mm spacer. When you put the rear wheels up front, slap the spacer on there. or 275/40 and it'll be slightly pinched.

I’m running these tires on my staggered set up. I’m running 285/35/20 front and 305/35/20 on the rear. My wheels are 20x10 and 20X11.5. Be aware that these tires run a size bigger. I found out going from a pirelli 305 to a BFG 305 on my 2005 Saleen and burned the paint on both of my fenders.
