What parameters are you all monitoring?

i have long term fuel trims, banks 1 &2
coolant temp, rpm
lamse banks 1 & 2
measured lambda banks 1 & 2

what should i be monitoring?

There isn’t much you need to monitor.

Air Intake Temp: Sense the tune in the car will pull timing due to excessive intake air temps, a BOOSTED Coyote car owner would like to know before he/she does a 40 Roll or Dig race (in a street situation) that the car is going to pull timing.

Short and Long fuel trims: this will let you know whether something is off. Bad O2 sensor, bad fuel pump, ect. If the car is commanding excessive amounts of fuel, to need to check things.

Knock: Truth is if you see it, it did the damage. No one is racing looking at the knock. If you are, your car is too slow anyway. You better look at the road and feel the car. If you want to look at it, cool.

One should be data log’in and review what the car is doing.

You don't have to be racing to monitor stuff, and like you said at that point it's too late

knock is good to keep an eye on after you get a new tank of gas etc

All ways Premium gas. Always keep a can of octane booster from companies like VP Racing just in case.

I’m so anal that is literally took a race jug to the Shell gas station. Filled up 2 gallons what came out the pump (which is whatever the last person pumped, 87).

Put the VP Racing Octane Booster in, then added 10 gallons of 93 before the car went to the shop for the supercharger and dyno tune.

I take every precaution I can think of. Going to E85
