That is known as rev hang and is pre programmed in the ecu thanks to the drive-by-wire throttle system.The GT350 has a feature to not let the rpm drop all the way down to idle for 1-2 seconds when you press in the clutch to shift. Normally, When you press in the clutch, the rpm needle will drop all the way to idle. With the GT350, when you press the clutch in, you will see the rpm needle begins to drop. However, it will only drop to around 2K rpm at which time it will hold there for a second or so waiting for you to shift. If you continue to hold in the clutch and not shift after 1-2 seconds, the rpm will then again continue to fall to idle. In my experience, the rpm at which it is held at is dependent on when I shift.
Our cars also have a built in dampening system when we go WOT in first gear to open the throttle body slower than we actually depress the accelerator. Sucks eh?
Must good tuning platforms should be able to iron this out, just like Hondata over at the Honda camp does.
