The car was more to ping after long drives such as freeways etc. Also, MT 5th gear rpms of a freeways are just around 2500 spot where pinging is the most pronounced. I once drove next to the concrete divider on a 5th on the freeway and it was consistent uninterrupted ping all the way all the time.

I did set "Octane adjust" option. It helps, but does not eliminate pinging completely.
Well a fifth gear pull at 2500 rpms is going to have more load than a 2nd gear pull at 2500. You said you did the install yourself, did you line up the rubber air induction tube with the plastic piece to the bumper? I just installed mine on my 2019 (I honestly don't know how similar that design is) and that process alone took me about 30 minutes before I was confident I had it lined up. If I left it as is then the top would have been collapsed and it would be sucking in engine bay air.

Yes, in 2017 you are supposed to make a cut on the rubber tip of gt350 intake in order to be able to fit it. I removed the air filter cone from the airbox to be able to insert my hand inside thge passage that goes to the bumper and make sure the rubber is aligned fine (essentially, goes over) bumper piece. This is the easiest way of doing it IMO, only takes several minutes.
