Used to be dead easy in my C6 Vette as the cigar lighter socket was always live so I used the appropriate CTEK connector - much easier than rummaging around in the engine bay. Sadly on the Mustang (like most cars) the cigar lighter socket seems to be on/off with the ignition so not an option...

I'd only worry about OEM if you have a HUD, which we don't - on my wife's 5-series the non-OEM screens made the HUD dull and fuzzy as they weren't properly silvered (even though they were tagged as HUD versions). Otherwise glass is glass. You also have to proactively chase LV if you want OEM...
As you've got manual transmission it'll be down to the much higher gearing post-facelift (there are quite a few threads about it). Pre-facelift versus post-facelift is:

The ironic part is the regulations mandate how big the mirrors have to be...but don't appear to mandate whether or not you can actually see anything useful in the mirrors! (i.e. RHD passenger mirror)
