They don't make shifter trim pieces, but I believe you can swap the auto trim and boot assembly for one from a manual car.
Galpin Auto Sports will do it for you. I had mine done there, but I don't know that it's worth it. I'd call local repair shops around you, ask if they have ASE certified techs that would be willing to install parts from Ford Performance.

I've also been using NVX. I scored some bulk packs from Sonic Electronix. Just as good as Dynamat as far as I can tell. Easy to install, sticks like a sonofabitch.

I've just embarked on this particular journey myself, only I'm deadening the entire goddamn car. I've currently got the entire back of the car ripped out, and the passenger seat is also in storage. Now I have to figure out how to get the center console out and the carpet up. ugh.

Seriously though, I'd give another vote to the FP tune. My car has good low end torque, still feels responsive all the way through the RPM range. Pulls right up to the red line.
It's not as hot as other custom tunes, but I went with it because it kept my warranty. I'm happy with it...
