The only V8 I've ever driven was a friends C4 Vette with the L98. I didn't push it or anything, but to me, it's my opinion that V8s are such giving motors; they keep pulling and pulling so willingly, and that one did even if it had less than 300hp, so I like V8s from my short experience.I liked my Coyote in my '13. I personally liked the LS2 in my old GTO more for the power output, massive torque, and still carried a 7k redline (cammed)
i'm fine with the Coyote, to be honest. I'll be honest though, as much as I'd hate to go and buy a Chevrolet, I might be in the new Camaro instead of a Mustang.
I'm not a brand/model loyalist. I buy whichever is the best car performance and appearance wise.
I think if anything I avoid Chevrolet, because my father force-fed me Chevrolet this, Chevrolet that as a kid. My parents have been married for over fourty years now, and only two cars WEREN'T Chevrolets. a Cutlass Calais (no Chevy variant) and a Pontiac Vibe (no Chevy variant)
Much like you, I could go with either or one day when that's financially possible. My family has had more Fords than Chevys, but my first car was a GM, an '08 Saturn Astra(actually a re-badged Opel Astra, but it was a damn good compact, better than the Focus of the time). My dad had an early '00s Impala and Silverado 4x4 as company cars for a short while way back. In any case, if I could effectively vote with my wallet, my money would go to the one that appeals to me best on a performance and everyday functionality standpoint. The only car maker I have bias towards is Porsche out of nostalgia and other things, but I'm not loyal to any one maker.
Looking at both, neither one is perfect to me, as it seems one offers more of one thing than the other. The Camaro offers more performance, an even smaller footprint, and less weight. But the Mustang offers more comfort, refinement, and practicality, apparently. It's a game of compromises, but of course this is what the internet and people who haven't actually experienced one aside from looking at pictures and reading magazines have said. The only legitimate way of finding out is actually getting seat time in both and finding out for myself which one I prefer. I hope that'll become a possibility one day soon.

Or even better the Ecoboost 5.0 TT that's supposed to hit the Raptors as an engine option. I'd pay extra for that all day long and laugh at any Camaro... A V8 TT Mustang with a warranty FTMFW
