Any data points if the setup will fit without rubbing? I have Steeda Progressive springs with Steeda camber/caster plates

I understand I will need extended studs and open lugs, correct?

Currently on 19x9.5 PP rears with 25mm spacers all around looking to shed weight but I'd rather not redo the springs.

Just to verify, what wheels do you have?
Currently PP1 rears all around. Looking at Apex SM-10 19x11 set. These have 26/52 ET.

To be clear I'm really interested in taking off all the spacers and having lighter rotating mass - can I do that with 19x11 with my lowered and cambered suspension? Do I need extended studs and open lugs?

You only need extended studs and a 25mm spacer up front if you run the et 52 on all four. If your fronts are et 26 you won't need them. It just won't be a rotatable setup like et 52 all around would be.
