We have discussed the mustangs diff overheating issue with a few of our customers who do serious track driving. With the higher EGT's and position of the rear pipes, the exhaust can definitely subject the differential to additional heat soak. Using a quality header wrap on the section of piping around the diff should help prevent this heat soak. It may not solve the issue completely by itself, but in combination with quality fluid, and say an external cooler, you would be MUCH better off.
While the keeping heat soak down may be a better tradeoff, what about the increased corrosion by having the wrap on that section of piping? That's certain to get wet in any sort of rain and being a cooler section of the exhaust, staying wet for some time.

I'd be more concerned about corrosion with carbon steel piping, not so much with stainless. The piping will be hotter under the insulation because it can't reject the heat as fast through the insulation as it can without it being there.

Is there enough room to install sheet metal heat shields?

It gets really close towards the rear of the car - I think any shield would have to be tacked to the exhaust and would be too close to be very effective.

Where I live, rain is rare..

Even if soaked, I would think that 10 min of the car idling would dry out the wrap once in the garage, e.g. with a couple doors opened?

All I saw were little white X'es in black boxes until I posted a reply.

If the broken ones are only cracked in one place, they're still sort of usable. They can be super-glued but will re-break in the same place unless you're extremely careful removing or re-installing them.

edit: helped a tiny bit with NVR, still have a touch.

The more I look at this picture, the more I think that heat boiling off the pipes ahead of the diff is where a significant amount of added heat is coming from. The pipes themselves look like they're occupying space in what's already a restricted area for air flow.

Stick-axle cars will at least slosh the lube out into the axle tubes in the corners, which is surface area to reject heat from that an IRS doesn't have available.
