So I'm looking at a set of Continental ExtremeContact DW. My wheels are 19x8.5 up front and 19x10 in the back.

I'd like to get 285/35 for the rear and wasn't sure whether to go with 255/40 or
a different size tire.

The sidewall difference between the 255/40 and the 285/35 is 2.25mm, but its on the front. I'd imagine that you couldn't notice a 2.25mm difference?

I could go with a 255/35 but the difference would be ~10mm.

I wouldn't hesitate to do R:285/35 and F:255/40.

Don't worry about the difference in overall height of the wheel. You're measurement should be amount of sidewall. With a 255/40 it won't be much taller, if at all, off the rim compared to a 285/35. I get worried about having a shorter tire than stock up front, so I say 255/40.
