Car has 18" stock wheels. I want something bigger but think 20 might be slightly too big so 19s seem perfect. My question is what's the optimal wheel width to get?

Depends on the wheel your after and also if you want to rotate or you prefer staggered.

For instance I have done a 19x9.5 GF6 wheels square setup so a member can rotate

Ive done staggered setups like the 19x9.5 & 19x11 F14 wheels for a member so fitment is subjective to your liking.
