Since I already have a brand new pair of 2.5" in/out Borla stingers in the garage from a previous project I considered cutting out the stock mufflers and welding these in to the 2015 GT.
I know there are much better bolt in systems, but these are free and already in my hands and I'm curious if they would make any real difference in sound since the suitcase and stock cats will still be in place. My question is, has anyone gone this route yet? If so, how does it sound?

What are your goals? To just sound better? Then do it. Save a ton of cash doing it too!

Want to make more power and have something to build off of? Then sell them and buy a cat back.

I have a set of magnaflow axle backs from my 08 gtcs sitting here, my plan was along the lines of yours, but using the mufflers and making my own cat back. Axle back pricing for the 15 mustang is insane imo. $700-$800 for two mufflers, two 90's and 2 tips.

Just looking for sound at the moment, but more importantly I don't want to hurt the cars performance.

If the sound isn't enough for you(being Borla, I bet you'd like it anyway) you could always add this: http://www.mustang6g.com/forums/showthread.php/first-look-lethal-6113.html?p=159669#post159669
It's funny you shared that with me as I was looking for something just like that. I just can't justify spending $1000+ on a catback that consists of 2 mufflers and 2 bends. Especially since I already have 2 decent mufflers in the garage.
