I seen the posts on these after a search on these. But not much info on which spacer to use.
What I'd like to know is what's the proper size spacer to use in the Defouler itself? Small, medium, or large?
Like which one for FI? For Cats and so on?
Is it trial and error to see which one works for individual setups?

Just use the smallest one and change it if you need to. You wont need to, because your tune should have FAOCS turned off.

Actually I just read smallest is for no cats, mid size for hi flow cats, biggest for damaged cats(rare use).
But still would like to know what you were mentioning about FAOCS being turned off In the tune.

You're talking to a rookie.
It stands for fore-aft oxygen control scheme. It’s a method Ford uses to counteract aging of the cat.

If you’re removing cats on a car with the stock tune or a tune with faosc enabled you need to select the right insert. If you don’t you can throw off the fuel trims and get a code. Not dangerous but annoying.

A tune for headers should usually have this function disabled, as it just causes issues when the cats are gone or not stock. If you have a tune for headers you can just use the smallest insert, regardless of if you have cats or not.

I have ARH Catted Headers and a Lund tune so whatever they do for this setup is what I have.
Getting 420/430 codes.
So after installing the defoulers with spacer and if fuel trims are abnormal try the next size spacer?

That is what I would do, I think you'll find that you wont need to change spacers. It will likely just work first try.
