This isn't about "which brand tire to choose" - For my uses I'm hooked on the the PSS. In that light, I got a great deal on some basically new take offs, but they aren't in the ideal size I wanted but I have 3 different size wheels to choose from to mount them on.

Wheels:

19x9
19x10
19x11

Tires.

255/40/19 x 2
285/35/19 x2

My thought was to put these on the 19x10 and 19x11 and have the little bit of stretch rather than the better looking setup of the 9 and 10"...

My other idea was to put the 255 on the 9's for daily and the 285s on the 10's and just use them for track and go with a 295/35 on the 11s.

Yes, I way overthink this shit. ;)

I have 19x10s for the track using the stock PP rims for street.
Going to go with 275s all the way around. I was under the impression that 285s would need to be spaced out for the fronts.
I think I will go with RE 71 R tires or Dunlop Star specs.

I would do a square set up no matter what size you do.

The ability to rotate the tires is key to not being tire poor.

I'd like to, but that requires two new wheels. Right now I'm getting near new take-offs of the Michelin PSS for $100 a tire, so I'm not too worried so long as my supply doesn't dry up. ;)

(40 series would work too, but don't mix them unless you want front tires taller than your rears)
