So I put on a borla S-Type cat back a month ago, and at first I wasn't all that happy. It was a bit too loud in normal driving, and under full power it was rather raspy and high pitched. Not muscle car like at all.

Now it seems like it's quieter in normal driving, and has much more bass under full power. I'm now super fond of it.

I've never heard of mufflers 'breaking in', so I assume it's just my own perceptions altering (maybe so I feel better about spending the $1100). But might I be mistaken?

There is definitely a break in. I have the same exhaust and the same opinions both after install and 1,000 miles later. It does still get raspy above 3k but not as bad as when I first installed it.

It's true, they do have a break in of around 500-1000 miles.

What happens is that the carbon and particles in the exhaust coat the inside of the mufflers (the black stuff that appears) and they change the final tone of the mufflers.

Totally normal, and it's why many videos online of how mufflers sound right after someone puts them on are a bad guide to go by, since the sound changes once broken it.

There can definitely be a change after the first x number of miles. Has to do with carbon build-up within the exhaust. I believe.

Probably both. They will change sound as they burn in and you will get use to them also. My magnaflow comp series cat back had a pretty significant drone at install and now has none at all after they burned in. I would give any system a 1000 miles before coming to a final conclusion. As far as volume I think I'm just use to them so they don't seem as loud.

How do you like the Competition series? I'm debating them or the Street. I just sold my ATAKs because they were just too much to handle.
