There is a video floating around of a guy pulling 590 HP and ~450 Torque out of a carbureted Cobra Jet Coyote on an engine dyno. It stands to reason that built properly, this or more is doable with an EFI setup.

If you wanted to get crazy, like $30k+ crazy for an engine build, something like 700-750 should be possible, maybe more in some custom stroker build.

So could my 619 guess be a contender or am I out? Really crossing fingers on this one.

What's the most power our coyote engine can make with no blowers

No blower so nitrous is OK? They have 250 kits out there, and probably even bigger. One article I read they had 150 pills in and made 560ish HP and 590ish torque. So no blowers I'd say 600 is fairly easy.
