Wasn't there a issue with some ceramic owners saying dye from there jeans discoloring the seats?
I also heard this, but haven't seen it. My wife has one pair of jeans that stain everything they touch. I make her sit on a towel when she wears those!

Do premier trim, its on of my favorite things about mine! If you go for a GT350 steering wheel the stitching will match too.

Also, I drove 50th LE for around 3 months and can attest to jeans staining the light leather. It's one of the reasons I let the car go.

With big bold exterior colors (blue, reds, yellow), a black interior works well, especially with the dash breaking it up, and potentially the contrasting stitching on a Premier interior.

However, if you wanted a visual impact for DIB, Ceramic seems like a perfect interior choice - it's a major contrast vs. the black interior components, but neutral so it compliments the blue exterior.

Redline is great for neutral exteriors: black, gray, silver and white.
