Went away to VT and had this for breakfast one day. So good I had to duplicate at home.
Cali Benedict, got my poached eggs down to a science now...

Also I love doing mine in chicken broth instead of water, and then a good dose of S&P over the top.

I think I had good results by doing mine in the microwave, it's been awhile since I made them so I'll have to find my notes 🤣

Also I love doing mine in chicken broth instead of water, and then a good dose of S&P over the top.
Fill a 3 Qt pot about 2/3 with water, cover and get it to a slight boil. Take two Jumbo eggs and crack into small bowl together making sure yokes don't break. Once water is boiling turn off burner and wait for bubbles to stop. Slowly pour eggs into water and cover tightly as soon as possible. Set timer for 4:45, use slotted spoon to remove and take care to let as much water drain off before plating.

I love them with corned beef hash and now making egg Benedict in various forms. Pictured above is slightly toasted English muffin, layered with sautéed spinach, Canadian bacon, tomato, avocado, poached egg all covered with Hollandaise sauce (butter, egg yokes, lemon, salt, dijon mustard).

Hell yeah. Haven't tried that method, you've given me some ideas!

On another note, I sold the old electric range and got a gas one. 1st cook the other week was canned biscuits to try out the gas oven, bacon, eggs and some store bought sausage and some of my homemade ones. Made a hell of a mess. Learning as I go lol...

Forgot to mention, anyone hooking up a new natural gas appliance...check your fittings.

This adapter came with my gas hookup kit. I bought a coupling to hook it up to my stub out from the wall. Good thing the kid in me said blow through it first 🤣

The check valve inside was installed backwards. I could have drilled out the check valve. But that feels hokey and I don't like doing hokey stuff.

Mum and dads for Easter tea tonight, my job is the carving :

Ham and lamb, with lamb being the long standing family favourite :inlove:

Served with :
  • Garlic new potatoes.
  • Roast potatoes, with rosemary, sea salt and garlic.
  • Carrots (in butter).
  • Corn (not on the cob, but I don’t know what you guys call that).
  • Broccoli.
  • Sprouts.
  • Cauliflower cheese.
  • Mint sauce.
  • Gravy.
Deserts (all homemade) :
  • Baked cheesecake with ginger nut base and fresh berries.
  • Millionaire’s shortbread.
  • Rice crispy cakes with mini eggs.
  • Traditional Easter simnel cake :

The full meal was gluten free (my sisters boy is celiac), mum cooked for 13 of us, and she’s 74 in two weeks time ! :sunglasses:

Talking of simnel cake, the homemade local ice cream place (a short walk from us) did a simnel Easter special that was ‘very’ good :
