I love your reasons for going with the Bullitt -- similar to mine, as I was considering a GT too. It's a gorgeous color and I never get tired of looking at it. The faux cap has grown on me a bit, but I'm still not sure I won't follow aileron's example in swapping it out for a plain panel with the lettering from the '01.
Being out here on the left coast, I probably won't run into you at the local Cars & Coffee, but best of luck in your new Bullitt... enjoy!
(p.s. I see you had (or still have?) a '65 GTO... that was my dream car growing up; you're a fortunate man!)
