Yep, a quart every 6500 miles is not bad. Most high performance V8s do worse than that. How the car is driven also has an effect on how much oil is used - ie, past the rings and through the PCV system.

I would not sweat a quart every 6500 miles. That is like 1/6 quart every 1000. You are racking up some miles on that car. What is your daily commute?
Car was purchased in Jan of 2018 and was driven A LOT for the first year. Daily commute was anywhere between 50-100 miles depending on where I had to go see clients. I have stopped using the car for long commutes now and I have a new job which is about 6 miles to work and back. The car sat in bumper to bumper traffic for 80% of the miles I have driven and if anyone has been to the DC metro area you will know that it can be brutal. Anyways, thanks for putting me to ease. I just added half a quart and will take a picture of the dip stick once the oil settles and get proper reading. I will check every 1000 miles and see how the consumption goes but from what you mentioned 1 qt every OCI of 6500 is acceptable so I am happy.

That's what I said. Right now, it's quite a bit under the min mark. When it's hot, it's probably barely over the min mark line because the coolant expanded.
Yes, it is right at the MIN mark after a drive. I just drove for about half an hour and checked the coolant to confirm.

I’ve got 7500 miles and I noticed my coolant was low after I changed from the stock overflow to the Mishimoto one. It took about half a jug to get me back to the middle of the sight tube.

As for oil....I’m probably right above the bottom line for the crosshatch area. I’m going to check it again this weekend.

FWIW I've also noticed a very gradual loss in coolant on my '18. Somewhere between 1 and 2 ounces a month, based on the amount I've needed to add. (In a typical month I only drive about 600-700 miles.) Which doesn't sound like much, but over a year it would be 12-24 ounces, and that's more than I've ever needed to add with a new-ish car.

I have a 2010 Infinit g37 and around 62K miles the water pump had to be replaced. The coolant was replaced at the time as well and as of today (111,xxx miles) later, the coolant is at the same level. Echoing what you said, for a new car this seems a bit odd but it could be the formulation of the coolant and it evaporates over time.
