Now that people actually have cars in their hands, has anybody put on a tune to remove the governor and see what the actual drag-limited or gear-limited top speed is?

I think it will be about 163-165 for a PP due to the 3.73. 3.55 geared cars, not sure.

If the Boss had 3.31 gears it would have had a killer top speed but those 3.73s just kill the top end. I ran the Texas Mile with my 3.73 equipped GT and it hit 154mph at the top of 5th then just plain bogged when shifting into 6th.

Which car? 2015 Mustang GT? Those are standard with the 3.31, so depending on what gear should be 168-ish by the top of 5th at 7k rpm.

with 3.15 probably around 175ish in 5th.

164 mph? That´s just 262 kph...The Ecoboost should manage to do that.
A Cayman S with 325 hp makes 177 mph (283 kph). Mustang has over 100 hp more. Even an M235i with 326 hp goes over 169 mph (270 kph).
