My front edge of hood is lower in the center than the sides is that adjustable with the latch or don't mess with?

Yes, easy to do. You can take the plastic cover off that surrounds the latch (not required just made it easier to get to the two nuts). There's two 10mm (I think) nuts. You loosen them and you can slide the latch up and tighten. I slid mine up as high as it would go and sits near perfect.

Another idea

My front edge of hood is lower in the center than the sides is that adjustable with the latch or don't mess with?
Several weeks ago I did the same as JCFoster but it was still a bit low. My solution was to add two stainless washers under the bolts on the hood catch attached to the underside of the hood itself. Now the center of the hood is perfectly level to the bumper cap.
I've noticed in photos and real life this uneven gap noticeable especially on white cars.

You can adjust the latch but be careful not to go too high or the hood may be more susceptible to flutter at speed.
