Help! Can't put the brake back

I use a large pair of channel lock pliers and a shop towel in between to prevent scratching the caliper.

don't let anyone touch the brake pedal when the calipers are off the rotors. "I've never seen pistons just decide to move on their own."

It has nothing to do with anyone touching the brake pedal. There is enough pressure in the brake lines that the caliper pistons will slowly collapse a bit when you remove the rotor.
