I've driven both a GT350 (tech pack) and C7 with Z51/MSRC on the same winding back roads. Both great cars, both great choices for different reasons. I honestly preferred the C7, however, and so I'm now planning on getting a C7 GS in 3 years time. My wife will allow that. What she doesn't know yet is I first plan on buying a 2018 Mustang GT as my daily .The C7 is a pretty amazing car, I wish I had personal experience with the GT350 and/or GT350R because I also love that car, and I'm sure it is an absolute blast to drive on the track.
With that being said, I had a 2013 Camaro ZL1, modified with suspension, 305 square tire set up, huge front aero splitter that I could and would stand on (210 lbs), wicker extension, brakes, and made 575 rwhp. I sold that back in February and bought a 2016 C7 2LT Z51 7 Speed Manual, only thing I've done to the car was change out pads (I cooked the OEM pads first track event) and brake fluid and depending on the track I'm running anywhere from 1-4 seconds faster per lap than my old highly modified ZL1. Both vehicles I use NT01 tires.
The ONLY down side of the manual C7 Z51 is that if you're fast enough and it's hot enough outside you'll melt the AFM actuators (I've done it once already, in 95* ambient temps) which are butterfly valves that sit in front of the mufflers. It is replaced under warranty but it is a PITA. The only work around is if you cut that section of pipe out and weld in a piece of pipe and then metal zip tie the ~4" section of pipe with the AFM actuators to it. Tadge acknowledged that it is a problem in the sense that he said they will be removed from the MY17 Z51 manuals (Z06's never had them). It is a design flaw but also has a work around.
Anyways, if you have a chance to get a C7 Z51, C7 Grandsport or GT350/350R I don't think you'll be disappointed.

I agree. I wish they hadn't done the Alice Cooper rear tail lights, and the reflectors behind the rear wheels are way too big, but those are just nit picks. Overall it is very good looking.The C7 Z51 is a great looking car.
