The first should be 196€ indeed, I did pay a bit more as I had them do some extras for me...

The brochure/price-list doesn't say why the rates go up and down and what gets done though... already wondering if they will charge for spark-plugs if I bring my own etc.

Ah ok, that explains the difference then :-)

Good that you mention the spark plugs, mine is due for it's first service soon and I have to remember to ask them whether to change the spark plugs or not.

Is it best to change these every year?

Not sure if @Nicolas05 had some extras done.
As for the spark-plugs, here you can find a service checklist...

https://www.etis.ford.com/fordservice/serviceScheduleForm.do

It looks like the 3rd year is the first big maintenance, so better keep an eye on parts that need to changed & charged when you don't need them.
Like when you have your own aftermarket CAI you don't want them to charge you for the new air-filter that's in the service list/price... etc.

Had my first service last week @ exactly 15.000km (9 months).
Warning sign popped-up at about 14.600km. So exactly as it should be.
I paid 242€ for the first service, which my dealer said is the official rate and should apply at any dealer you go.
€242 was also the price I found for Belgium.

I paid €280 in NL (bloody expensive Cloggies). :)

The first service is only an oil change, which grates - but I wanted the Ford stamp.

Wow I'd never wait 3 years to change the plugs. One of the first things I did on mine was change the factory ones for 1-step colder ones (Denso ITV22 from Tune+) and I plan on changing them just before 20K. Thing is: it's an easy and relatively cheap thing to do, that could make a huge difference in engine health and power if something would go bad with one of the plugs. So why not

Only just noticed that the Police Mustang in the new Transformers movie is running on Niche Essen wheels, just like mine :)

Yep, and that's why I was asking... On my previous car (MK V Golf GTI) which is also a 4 cylinder turbo charged engine I simply followed the service intervals as prescribed by Volkswagen. Don't think that was the best idea, had some spark plugs replaced by VW for free after 2-3 years or so as the original spark plugs were poor quality and afterwards someone told me that it's best to change them every year... So I was wondering if I should do that with the Mustang... I'll ask my Ford dealer but even if they say it's not necessary I might still have them changed...

200 eur without materials? Seems too much for my standard :-\
I paid 230 eur but oil can't be only 30 eur!

Just remember that Ford can throw away your warranty unless you get those Ford stamps every year... :-/ Nothing I'm going to risk, I just hope they aren't too hard ball on it as I won't be getting mine in before the 1 year mark...

For the quality of assistance I got from Ford and my dealer, reaching the 2-year mark and letting the warranty expires will only be a happy moment :)
I did the service at the 1-year\20k km mark, but hopefully at the next service I will be out of warranty so I can go to a regular garage for servicing at 1\3 of the cost.

Wow, if a Ford dealer doesn't do the service ford can void your warranty? And ford charges for the warranty? In the US they can't do that. I can go somewhere else or change it myself and ford still has to honor my warranty.
