I'll put my vote in as well. I would certainly be interested in a thicker true flat bottom steering wheel in the $400-$500 range. Alcantara preferred but leather will work as well with color accent stitching.

I understand what you're saying, but I doubt ford is that cheap. It's not like they didn't have to make tooling for all the other GT350, and even more GT350R, exclusive parts. Chances are it's just a design choice, after all it's mostly for aesthetics reasons for a car in this class.The problem with the flat bottom is that trim piece. You can't really make the wheel any flatter without creating a new bottom trim piece.
Honestly, I suspect that is why the GT350 wheel is not flatter. I think they cheaped out and did not want to make tooling for what is a rather limited edition car when they could get by with using tooling for the normal car.
You can see from this image if the wheel was any flatter that trim piece would not work.
