Have you tried manually figuring out your gas mileage? If that comes out to like, 20 mpg and the digital readout is still 14, then there's something going on. If the hand calculated is +/- 1 mpg of the digital readout, then I wouldn't waste any time on it.

Is your driving habit pretty much the same tank to tank? Or does it not matter how you drive, it's 14 period?

Next time you're cleaning the carpet, snap a few pictures to show how you hooked it up. It'd be helpful for future dashcam users. Lastly, how's it holding up? I feel like after installing mine, all the crazy's learned how to drive! lol
