Pretty much all modern automatic transmissions have sealed systems that are designed to go 100k plus on factory fluid. You can of course change it earlier if you want, but its not a maintenance gimmick.
With respect to the fluids, the brake fluid is the only one that's changed based on time not miles (every 3 years).
The transmission fluid and rear diff aren't recommended until 150k miles. The coolant isn't recommended until 200k. This is all according to Fords own maintenance schedule. Yes...

PPF Is for protection against rock chips. For a declid, it's way over kill and unnecessary.

CAI = cold air intake. I thought Bullitts came with those factory, but I'm not certain. If not, then yours has been added, which means the computer was likely tuned for it.
PPF = Paint Protection Film (clear bra for you old schoolers).
I wouldn't be hung up on the fluids needing a change...
Looking at the conversion, thats about 36k in US dollars correct?
If so I'd say it's a fair price. You can have those rock chips repaired and do PPF over the front afterward.
As long as thats a factory CAI and the cars not tuned, I say go for it!

PPF on the decklid is pretty overkill IMO. Ceramic is all you need.
As far as removing scratches. You can polish the decklid. Just start nice and easy using a light polish. I believe it has a clearcoat on it.
This is mine with ceramic. Water spots and smears come off easy with a good topper.
