Here's another prime example of the hood with poor fitment. Unless the fender bends in (not possible) the edge of the hood is off and can never fill that gap, it's curved wrong both vertically and horizontally/the mold isn't even right.

That's how the OEM hood fitment is on my 2020 GT350R, and I'm the original owner. I'll try to take a picture of it later.

Unfortunately everyone that does the custom work and old school are just that, old school. They won't touch newer cars and only work on the older classics doing custom work and what not.
Well that's unfortunate. I hope you eventually either find someone to address your issues or you find another hood that works for you. Good luck!

I used all Ford 350 parts, including the hood hinges.

Someone who has a 350 put a 500 hood on his car. It required a lot of rework, around the door/fender/hood area and around the lights.

The Ford 350 Hood on the Ford 350 Fenders sits up a bit in the middle. There is a lot of adjustability, but adjusting the hinge to frame requires the fender to be off. A lot of work. Mine is still not perfect after 10 years. Won't have a chance to adjust them again until I remove the fenders to swap out the 350 radiator core support for the 500 support, which has the Hood Pins Built In. The 2020 and up 350s use the 500 core support without the hood pin hardware. The Hood Pin Hardware should provide another point of contact to locate the hood from which I can then adjust the hinges correctly. It also requires cutting the 350 hood to support the hood pin hardware.

Not sure how these other aftermarket hoods fit with cars that haven't changed out the core support on the 15-17s. 18s and up have a lower core support made out of metal instead of carbon fiber. .
