I am hoping tonfit R7 315/30/19 front and 325/30/19 rear. Good to know a 325 fits in the rear.
Would we need a tune to adjust for such a bigger tire? I know going from a 305 > 315 isn't that big of a difference, but a 305 > 325 is.

It's not just tire size, but compound that will make a difference. The Michelin PSS tires are great street tires, but still nothing like a slick or Hoosier A7/R7. It will be interesting to see if Ford Performance (TrackKey?) will offer some MR tuning options. Some of use are considering the front R springs and R rear sway bar arms as well. The MR programming has to have a pretty wide range of adjustment to deal with all kinds of track conditions, so it's not like it "won't work", but may not be "optimized". The Boss 302 suspension was "optimized" for the Pirelli PZero tires too, but throwing on 315 R7s still dropped lap times by several seconds ;)

thatll be a hell of a fit, but based on the fact the front fenders are wider I dont see why it cant be a possibility.

A friend of mine just received his R and it has a 305 front. Only need 5mm on each side. Will hopefully verify soon.
Sweet !

Yes and no because we are basing them off the OEM specs they will be what we call OEM caliber wheels, but the concavity I am aiming for is a deeper then stock look. So technically yes is what I should say.

On the 19" I see a lot of people saying they want 275/35/19, is there a reason to go with that over 285/35/19?

Its just a more common size, and also readily available.
